Slow Cooker Beef Stew

Ingredients
2 pounds beef chuck, cut into 1-inch cubes 🥩

2 tablespoons olive oil 🫒
1 large onion, diced 🧅
3 garlic cloves, minced 🧄
4 carrots, peeled and sliced 🥕
3 celery stalks, chopped 🌿
3 medium potatoes, peeled and cubed 🥔
1 cup frozen peas (optional) 🟢
3 cups beef broth 🥣
2 tablespoons tomato paste 🍅
1 tablespoon Worcestershire sauce 🥢
1 teaspoon dried thyme 🌿
1 bay leaf 🍃
Optional: Fresh parsley for garnish 🌱
Directions
Step 1: Prepare the Beef
In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides, about 4–5 minutes per batch. Transfer to the slow cooker.
Step 2: Sauté the Aromatics
In the same skillet, add the onion and garlic. Cook for 2–3 minutes until softened.
Add to the slow cooker along with the carrots, celery, and potatoes.
Step 3: Prepare the Broth
In a small bowl, whisk together beef broth, tomato paste, Worcestershire sauce, and thyme.
Pour the mixture over the beef and vegetables in the slow cooker. Add the bay leaf.
Step 4: Slow Cook the Stew
Cover the slow cooker and cook on:
Low: 8–10 hours
High: 4–6 hours
Stir in the frozen peas during the last 30 minutes of cooking, if using.
Step 5: Serve
Remove the bay leaf and discard.
Ladle the stew into bowls and garnish with fresh parsley.

Serve alongside a green salad for a balanced meal.
