Parmesan Crusted Chicken

Ingredients:
•⁠ 4 boneless, skinless chicken breasts
•⁠ 1/2 cup all-purpose flour
•⁠ 2 large eggs, beaten
•⁠ 1 cup grated Parmesan cheese
•⁠ 1 cup breadcrumbs (panko or regular)
•⁠ 1 tsp garlic powder
•⁠ 1 tsp Italian seasoning
•⁠ Salt and pepper to taste
•⁠ 3 tbsp olive oil
•⁠ 2 tbsp unsalted butter

Optional Garnish:
•⁠ Fresh parsley, chopped
•⁠ Lemon wedges

Directions:
1️⃣ Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season both sides with salt and pepper.
2️⃣ Set up a dredging station with three shallow bowls:
– Bowl 1: Flour
– Bowl 2: Beaten eggs
– Bowl 3: Parmesan cheese, breadcrumbs, garlic powder, and Italian seasoning mixed together.
3️⃣ Dredge each chicken breast in the flour, then dip into the egg, and finally coat in the Parmesan-breadcrumb mixture, pressing to adhere.
4️⃣ Heat olive oil and butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
5️⃣ Transfer to a plate and let rest for a few minutes.
6️⃣ Garnish with fresh parsley and serve with lemon wedges for a bright, zesty finish.
