Asparagus & Lemon Basil Ricotta Stuffed Salmon Rolls

Elegant and flavorful salmon rolls filled with creamy ricotta, fresh asparagus, and zesty lemon, all baked in a rich garlic butter sauce—light, healthy, and absolutely delicious!
Ingredients:
For the Stuffed Salmon Rolls:
2 salmon fillets (skinless, ~6 oz each, cut into thin strips)
½ cup ricotta cheese
¼ cup Parmesan cheese (grated)
6 asparagus spears (trimmed)
½ tsp garlic powder
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional, for spice)
1 tbsp fresh basil (chopped)
Zest of 1 lemon
6 thin lemon slices
For the Garlic Butter Sauce:
3 tbsp unsalted butter (melted)
2 cloves garlic (minced)
1 tbsp lemon juice
½ tsp Italian seasoning
1 tbsp fresh parsley (chopped)
Directions:
1️⃣ Preheat & Prep:
Preheat oven to 375°F (190°C).
Blanch asparagus in boiling water for 2 minutes, then set aside.
2️⃣ Make the Ricotta Filling:
In a bowl, mix ricotta, Parmesan, garlic powder, salt, black pepper, red pepper flakes, fresh basil, and lemon zest.
3️⃣ Assemble the Salmon Rolls:
Lay out salmon strips and spread a thin layer of ricotta mixture on each.
Place one or two asparagus spears on top, then roll the salmon tightly.
Secure with a toothpick if needed and place on a baking dish.
Tuck lemon slices between the rolls.
4️⃣ Prepare the Garlic Butter Sauce:
Mix melted butter, garlic, lemon juice, Italian seasoning, and fresh parsley.
Drizzle over the salmon rolls.
5️⃣ Bake & Serve:
Bake for 15-18 minutes, or until salmon is cooked through and slightly golden.
Garnish with more fresh basil and serve warm.
