Breakfast Skillet

Ingredients:

4-6 strips bacon (cut into 1-inch pieces)
20 oz refrigerated potatoes or 3-4 cups frozen hash browns
1/2 cup sweet onion (diced, optional)
1/2 cup red bell pepper (diced, optional)
8-10 sausage links (cooked, chopped)
Salt and pepper to taste
4 eggs
1 cup shredded cheddar cheese (or your favorite)
Toppings: green onions, tomatoes, avocado, jalapenos, parsley
Instructions:

Cook bacon until crispy. Remove from pan.
Add potatoes to the pan, cook until browned.
Add vegetables, cook until tender.
Stir in sausage and bacon. Season with salt and pepper.
Make wells, crack eggs into each.
Cover, cook until eggs are set. Sprinkle with cheese, melt.
Serve immediately with toppings.
