📝 Ingredients
🍗 Chicken
2 chicken breasts or thighs
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
🍋 Creamy Lemon Sauce
2 tbsp butter
3 garlic cloves, minced
1 cup heavy cream
½ cup chicken broth
2 tbsp lemon juice
1 tsp lemon zest
½ cup Parmesan cheese
1 tsp Italian seasoning
🍚 Rice & Greens
1–2 cups cooked white rice or basmati rice
2 cups spinach or mixed greens
1 tbsp olive oil or butter
Salt & pepper
👨‍🍳 Instructions
🍚 Rice & Greens
Cook rice and set aside.
Lightly sauté greens with olive oil, salt, and pepper until just wilted.
🍗 Chicken
Season chicken with salt, pepper, garlic powder, and paprika.
Sear in olive oil until golden and fully cooked. Remove and set aside.
🍋 Sauce
In the same pan, melt butter and sauté garlic.
Add chicken broth, cream, lemon juice, and zest.
Stir in Parmesan and Italian seasoning.
Simmer until thick and silky.
Return chicken and coat in sauce.
🍽 Assemble
Plate rice first, add greens, then top with creamy lemon chicken.
