Strawberry Crunch Cheesecake Bars

These cheesecake bars feature a creamy cheesecake layer on a buttery crust, topped with a vibrant strawberry layer and a crunchy crumble topping. Perfect for strawberry lovers!

Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
For the Strawberry Topping:
1 cup fresh or frozen strawberries, diced
1/4 cup granulated sugar
1 tsp cornstarch mixed with 1 tbsp water
For the Crunch Topping:
1 cup crushed golden Oreos
1/4 cup freeze-dried strawberries, crushed
2 tbsp melted butter
Directions
1. Prepare the Crust:
Preheat your oven to 325°F (160°C). Grease an 8×8-inch baking pan and line it with parchment paper, leaving overhang for easy removal.
In a bowl, combine the graham cracker crumbs, sugar, and melted butter.
Press the mixture firmly into the bottom of the prepared pan to form an even crust.
Bake for 8–10 minutes, then set aside to cool.
2. Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing on low speed. Stir in the vanilla extract and sour cream.
Pour the cheesecake filling over the cooled crust and spread evenly.
3. Make the Strawberry Topping:
In a small saucepan, combine the diced strawberries and sugar over medium heat.
Cook for 5–7 minutes until the strawberries soften and release their juices.
Add the cornstarch slurry and cook for 2–3 minutes until thickened. Remove from heat and let cool slightly.
Spoon the strawberry topping evenly over the cheesecake layer.
4. Make the Crunch Topping:
In a bowl, mix the crushed golden Oreos, freeze-dried strawberries, and melted butter until crumbly.
Sprinkle the mixture evenly over the strawberry layer.
5. Bake:
Bake the bars for 30–35 minutes, or until the cheesecake is set and the topping is golden.
Let the bars cool to room temperature, then refrigerate for at least 4 hours or overnight for easy slicing.
Serve and Enjoy:
