Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter (melted)
For the Sweet Potato Cheesecake Layer:
8 oz cream cheese (softened)
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 large eggs
1 cup cooked and mashed sweet potato (about 1 medium sweet potato)
1/2 cup sour cream
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
For the Caramel Pecan Topping:
1/2 cup caramel sauce (store-bought or homemade)
1/4 cup chopped pecans
Directions
1. Prepare the Crust:
Preheat your oven to 325°F (165°C).
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well combined.
Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake the crust for 10 minutes. Remove from the oven and allow it to cool.
2. Prepare the Sweet Potato Cheesecake Layer:
In a large mixing bowl, beat the cream cheese, granulated sugar, and brown sugar until smooth and creamy.
Add the vanilla extract, eggs, and mashed sweet potato, mixing until well combined.

3. Prepare the Caramel Pecan Topping:
In a small saucepan, heat the caramel sauce over medium-low heat until warm.
Stir in the chopped pecans and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
Remove from heat and let the mixture cool for a few minutes before drizzling it over the cheesecake.
4. Assemble and Serve:
Once the cheesecake has chilled, drizzle the caramel-pecan topping over the top.
Slice and serve chilled. Optionally, garnish with extra pecans for added crunch.
