1.5 kg oxtail pieces
Salt & black pepper
2 tbsp browning sauce (optional but classic)
1 tbsp all-purpose seasoning
🌿 Aromatics:
1 large onion (chopped)
4 cloves garlic (minced)
1 tbsp fresh ginger (grated)
2 scallions (chopped)
2 sprigs thyme
1–2 Scotch bonnet peppers 🌶️ (whole or sliced)
🍲 Braising Sauce:
2 tbsp soy sauce
1 tbsp Worcestershire sauce
2 tbsp tomato paste
4 cups beef broth
1 tsp allspice (pimento)
1 tsp paprika
1 tsp brown sugar
🫘 Butter Beans:
1 can butter beans (drained & rinsed)
1 tbsp butter
Pinch of salt
👨‍🍳 Instructions
1️⃣ Season & brown oxtail
Season oxtail with salt, pepper, and all-purpose seasoning
Brown in a hot pot until deeply caramelized
2️⃣ Build flavor base
Add onion, garlic, ginger, scallions, thyme, Scotch bonnet
Sauté until fragrant
3️⃣ Add sauce & braise
Stir in tomato paste, soy sauce, Worcestershire, spices, sugar
Add beef broth
Cover and simmer LOW for 3–4 hours until tender
4️⃣ Add butter beans
Stir in butter beans and butter
Simmer 10–15 minutes until sauce is rich and glossy
5️⃣ Serve
