Sheet Pan Steak and Shrimp Fajitas

Ingredients:
For the Fajitas:
1 lb flank steak or sirloin, thinly sliced
1 lb large shrimp, peeled and deveined
2 bell peppers, thinly sliced (use assorted colors for variety)
1 large onion, thinly sliced
2 tbsp olive oil
2 tbsp fajita seasoning (store-bought or homemade, see below)
Juice of 1 lime
8-10 small tortillas (flour or corn)

1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
1/2 tsp garlic powder

1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper flakes
Instructions:
1. Preheat Oven:
Preheat your oven to 425ยฐF (220ยฐC). Line a large sheet pan with parchment paper or foil for easy cleanup.
2. Prepare the Steak and Shrimp:
In a large bowl, combine the steak slices and shrimp. Add 1 tbsp olive oil, 1 tbsp fajita seasoning, and half the lime juice. Toss to coat and set aside.
3. Prepare the Vegetables:
In another bowl, combine the sliced peppers and onions. Drizzle with the remaining olive oil, sprinkle with the remaining fajita seasoning, and toss to coat evenly.
4. Arrange on the Sheet Pan:

Remove the sheet pan from the oven, push the vegetables to one side, and add the steak and shrimp to the other side in a single layer.
5. Roast to Perfection:
Return the pan to the oven and roast for an additional 8-10 minutes, or until the steak is cooked to your desired doneness and the shrimp are pink and opaque.
6. Broil for Char (Optional):
For a slight char, switch your oven to broil and cook for an extra 2-3 minutes.
7. Assemble and Serve:
Warm the tortillas in the oven or a skillet. Fill them with the steak, shrimp, and roasted vegetables. Drizzle with the remaining lime juice and top with your favorite garnishes.
