Oven-Baked Lamb Chops 🥩🍽️

**Ingredients:
– 8 lamb chops
– 2 tbsp olive oil
– 3 garlic cloves, minced
– 1 tbsp fresh rosemary, chopped
– 1 tbsp fresh thyme, chopped
– 1 tbsp Dijon mustard
– 1 tbsp lemon juice
– Salt and black pepper, to taste

**Instructions:
1. Preheat the Oven:
– Set the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
2. Prepare the Marinade:
– In a small bowl, mix olive oil, minced garlic, rosemary, thyme, Dijon mustard, lemon juice, salt, and black pepper until well combined.
3. Marinate the Lamb Chops:
– Pat the lamb chops dry with a paper towel.
– Rub the marinade evenly over both sides of the chops.
– Cover and let them marinate for at least 30 minutes at room temperature (or up to 4 hours in the fridge for enhanced flavor).
4. Bake the Lamb Chops:
– Arrange the marinated lamb chops on the prepared baking sheet in a single layer.
– Bake for 10–12 minutes for medium-rare (or adjust time based on your desired doneness):
– Rare: 8-10 minutes (125°F internal temp)
– Medium-Rare: 10-12 minutes (130°F internal temp)
– Medium: 12-14 minutes (140°F internal temp)
– Well-Done: 16+ minutes (150°F+ internal temp)
5. Rest Before Serving:
– Remove the lamb chops from the oven and let them rest for 5 minutes to retain their juices.
6. Serve & Enjoy:
– Garnish with extra fresh herbs and serve with roasted vegetables, mashed potatoes, or a fresh salad.
