Lemon and Thyme Roasted Sea Bass

Ingredients:π
β’ Seafood:
o 4 sea bass fillets
β’ Produce:
o 4 cloves garlic, minced
o 1 lemon, sliced into rounds and zested
o 4 sprigs fresh thyme
β’ Baking & Spices:
o 1 tsp salt
o 1/2 tsp black pepper
β’ Oils & Vinegars:
o 2 tbsp extra virgin olive oil
β’ Dairy:
o 1 tbsp unsalted butter
β’ Beer, Wine & Liquor:
o 1/4 cup dry white wine
Instructions:π
1. Preheat the Oven:
o Preheat your oven to 375Β°F (190Β°C).
2. Prepare the Sea Bass Fillets:
o Pat the sea bass fillets dry with a paper towel.
o Season both sides with salt and black pepper.
3. Sear the Fillets:
o Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat.
o Place the fillets skin-side down and sear for 2-3 minutes, or until the skin is crispy.
o Remove the fillets and set aside.
4. Prepare the Pan Sauce:
o In the same skillet, add the remaining olive oil, minced garlic, and thyme sprigs. SautΓ© for 30 seconds until fragrant.
o Pour in the white wine and reduce slightly, about 1-2 minutes.
o Stir in the butter and lemon zest, whisking until melted and combined.
5. Assemble and Roast:
o Return the seared fillets to the skillet, skin-side up.
o Add lemon slices around the fillets.
o Spoon some of the pan sauce over the fish.
6. Roast in the Oven:
o Transfer the skillet to the preheated oven and roast for 8-10 minutes, or until the fish is opaque and flakes easily with a fork.
7. Serve:
o Remove the skillet from the oven and spoon the lemon-thyme sauce over the fish.
o Serve immediately with your favorite sides, like roasted vegetables or a light salad.
