WOULD YOU EAT THIS CRISPY BATTERED COD AND ONION RINGS PLATTER

Ingredients:
For the Crispy Battered Cod:
4 cod fillets
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 cup cold sparkling water (or beer for beer batter)
Vegetable oil (for frying)
For the Onion Rings:
2 large onions, sliced into rings
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp paprika
1/2 tsp garlic powder
1 cup cold sparkling water (or beer for beer batter)
Salt and pepper to taste
Instructions:
For the Cod:
Heat the Oil:

Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C).
Make the Batter:

In a bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and paprika. Gradually whisk in the cold sparkling water (or beer) until you have a smooth, thick batter.
Coat the Cod:

Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring they are fully coated.
Fry the Cod:

Carefully place the battered cod fillets into the hot oil. Fry for 4-5 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
For the Onion Rings:
Prepare the Batter:

In a separate bowl, whisk together the flour, cornstarch, baking powder, paprika, and garlic powder. Slowly add the cold sparkling water or beer, stirring until smooth.
Coat and Fry the Onion Rings:

Dip each onion ring into the batter, shaking off any excess. Fry the onion rings in the hot oil for 2-3 minutes, or until crispy and golden. Remove and drain on paper towels.
Serve:

Plate the crispy cod fillets and onion rings on a platter. Serve hot with tartar sauce, lemon wedges, or malt vinegar.
Helpful Tips:
Extra Crisp: For even crispier fish and onion rings, double fry them. Fry until lightly golden, remove, and then refry until extra crispy.
Flavor Twist: Add a pinch of cayenne pepper to the batter for a spicy kick.
