Spinach & Tomato Omelet with Fresh Salad

A light, protein-rich breakfast featuring a golden omelet filled with fresh spinach and tomatoes, served with a crisp side salad!

📝 Ingredients:

For the Omelet:

2 large eggs
1 tbsp milk (optional, for fluffiness)
1/2 tsp olive oil or butter
1/4 cup fresh spinach, chopped
1/4 cup cherry tomatoes, halved
1/4 tsp salt
1/4 tsp black pepper
For the Salad:

1/2 cup mixed greens (lettuce, radicchio, etc.)
2 cherry tomatoes, halved
1/2 tbsp olive oil
1/2 tbsp lemon juice
1/4 tsp salt
🍽️ Step by Step:

1️⃣ Prepare the Salad:

In a bowl, toss mixed greens with olive oil, lemon juice, and salt.
Add halved cherry tomatoes and set aside.
2️⃣ Cook the Omelet:

In a bowl, whisk eggs with salt, black pepper, and milk.
Heat olive oil or butter in a pan over medium heat.
Add spinach and cherry tomatoes, cooking for 1-2 minutes until slightly softened.
Pour in the eggs, swirling the pan to spread evenly.
Cook for 3-4 minutes, then fold the omelet in half and cook for another minute.
3️⃣ Assemble & Serve:

Plate the omelet with the fresh salad on the side.
