Green chili mackerel.

Ingredients:
– 3 medium-sized mackerel, cut into 3 pieces
– 5 shallots, thinly sliced
– 3 cloves of garlic, thinly sliced
– 10 green chilies, sliced diagonally
– 10 green cayenne peppers, thinly sliced
– 3 green tomatoes, sliced
– 2 cm ginger, thinly sliced
– 2 bay leaves
– 2 cm galangal, bruised
– 1 tbsp sweet soy sauce
– 1/2 tsp salt
– 1/2 cup water
– cooking oil
How to cook:
– Wash the mackerel and fry until almost dry, remove, set aside.
– Saute the shallots and garlic until fragrant, add the green chilies, green cayenne pepper, bay leaves, galangal, and sliced ginger, stir until wilted.
– Add water, season with salt and sweet soy sauce.
– Add the fried fish, sliced green tomatoes, cook briefly until the tomatoes wilt and the spices are absorbed.
– Remove and serve with warm rice.
