Fruit Salad

 

Ingredients:

For the Fruit Base:

2 cups fresh pineapple chunks
1 cup green grapes, halved
1 cup red grapes, halved
2 cups fresh strawberries, hulled and halved
1 cup fresh blueberries
2 crisp apples, diced
2 cups mandarin oranges, drained
2 bananas, sliced (add last)
2 cups mini marshmallows
For the Dressing:

2 cups whipped topping
1 cup vanilla Greek yogurt
2 tablespoons honey
1 tablespoon lemon juice
1 teaspoon vanilla extract
Directions:

Prep the Fruit:
Wash all fruits thoroughly and pat dry. Cut them into bite-sized pieces. In a large bowl, combine strawberries, pineapple, green grapes, red grapes, blueberries, apples, and mandarin oranges. Set the bananas aside for now.

Add Marshmallows:
Sprinkle the mini marshmallows over the fruit mixture. Set aside.

Make the Dressing:
In a separate bowl, combine the whipped topping, vanilla Greek yogurt, honey, lemon juice, and vanilla extract. Mix until smooth.

Combine Fruit and Dressing:
Gently fold the creamy dressing into the fruit and marshmallow mixture, ensuring even coating.

Add Bananas:
Slice the bananas and mix them in just before serving to prevent browning.

Chill:
Cover the bowl and refrigerate for at least 1 hour before serving.

Storage:
Store in an airtight container in the refrigerator for up to 2 days. Stir gently before serving. For best results, consume within 24 hours.

Serving Suggestions:
Serve in clear bowls or individual parfait glasses. Pair with pound cake or shortbread for an extra treat.
