Emerald Isle Salmon

Ingredients:
– 4 salmon fillets (6 oz each)
– 2 tablespoons olive oil
– 2 tablespoons fresh lemon juice
– 1 teaspoon garlic, minced
– 1 teaspoon Dijon mustard
– 1 tablespoon honey
– 1/2 teaspoon sea salt
– 1/4 teaspoon black pepper
– 1 teaspoon fresh dill, chopped
– 1/4 cup Irish whiskey (or substitute with apple cider vinegar)
– 1/4 cup heavy cream
– 1/4 cup Parmesan cheese, grated
– Lemon wedges and fresh dill for garnish

Instructions:
1. Marinade the Salmon: In a bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, honey, sea salt, black pepper, and fresh dill. Pour this marinade over the salmon fillets in a shallow dish. Cover and let marinate for at least 30 minutes in the fridge.

2. Prepare the Sauce: In a saucepan over medium heat, combine the Irish whiskey and heavy cream. Bring to a gentle simmer and let it reduce slightly for about 5 minutes. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste, then remove from heat.

3. Cook the Salmon: Preheat a grill or grill pan over medium-high heat. Remove the salmon from the marinade and place it on the grill, skin side down. Cook for about 5-6 minutes, then carefully flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

4. Plate the Dish: Serve the grilled salmon fillets drizzled with the whiskey cream sauce. Garnish with lemon wedges and a sprinkle of fresh dill for an extra touch.

5. Enjoy: Pair this delicious salmon dish with a side of roasted vegetables or herb-infused rice for a delightful meal.
