Ropa Vieja (Cuban-Style Beef Stuffed)

Slow cooked beef tenderloin in a tasty Cuban sauce with onions, peppers, garlic, olives and capers.

Ingredients

– 1 tablespoon of olive oil

– 1.4 kg of beef (flank, shoulder, chest, etc. )

– 1 onion, chopped

– 1 green pepper, minced

– 1 red pepper, minced

– 1 yellow pepper, minced

– 4 cloves of garlic, minced

– 2 tablespoons of tomato concentrate

– 2 teaspoons of ground cumin

– 3 teaspoons of sweet paprika

– 1/8 teaspoon ground Jamaican pepper
– 1/8 teaspoon ground cloves
– 500 ml of beef broth

– 1 box (410g) of crushed tomatoes

– 2 teaspoons of oregano

– 2 bay leaves

– 1 cup of green olives (optional sliced)

– 2 tablespoons of capers
– 1 tablespoon of cider vinegar (or lime juice)

– Salt and pepper to taste

– 2 tablespoons of fresh coriander, chopped

** Instructions

1️⃣
**Grab the beef:** Heat the oil in a large saucepan over medium-high heat. Add the beef and brown it on all sides, then reserve.

2️⃣
**Vegetable Return:** Add onion and peppers to saucepan and cook until tender (about 7-10 minutes). Add a little oil if necessary.

3️⃣
**Add spices:** Add garlic, tomato concentrate, cumin, paprika, Jamaican pepper and cloves. Bake for about 1 minute until flavors have cleared.

**Prepare the Base:** Add beef broth, crushed tomatoes, oregano, and bay leaves. Mix well, then put the beef back in the saucepan.

**Simmer Slow:** Bring to a boil, reduce heat and let simmer covered until beef is tender and crispy easily, approximately 2 hours.

6️⃣
**Beef Shredding:** Remove beef, shred it with two forks, then place it back in the saucepan. Add the olives and capers, and let simmer for another 5 minutes.

7️⃣
**Seasoning:* Add vinegar, salt and pepper to your liking. Cilantro just before serving.

### **Advice and options**

– **Slow Cooker:** After steps 1 to 4, transfer everything to a slow cooker and cook on low temperature for 6 to 10 hours or on high temperature for 2-4 hours.
– **Extra gentleness:** Add 60 ml of roasted red peppers towards the end.
– **Sweet variant:** Incorporate 60 ml of raisins for a sweet touch.
