📝 Ingredients
🥔 Potato Salad Base
2 lbs potatoes (Yukon gold or red), cubed
3–4 hard-boiled eggs, chopped
½ cup celery, finely chopped
¼ cup red onion, finely chopped
2 tbsp pickles or relish (optional)
Salt & black pepper
🧄 Creamy Dressing
¾ cup mayonnaise
1–2 tbsp mustard (yellow or Dijon)
1 tbsp apple cider vinegar or lemon juice
1 tsp sugar (optional)
1 tsp paprika
1 tsp garlic powder
🌿 Garnish
Fresh parsley
Extra paprika sprinkle
👨‍🍳 Instructions
Boil potatoes in salted water until fork-tender (don’t overcook).
Drain and let cool slightly.
In a bowl, mix mayo, mustard, vinegar, sugar, and seasonings.
Add potatoes, eggs, celery, onion, and pickles.
Gently fold until everything is coated.
Taste and adjust salt, pepper, or mustard.
Chill for at least 1 hour for best flavor.
