Chicken Stir-Fry
1½ lbs chicken breast or thighs, sliced
2 tbsp coconut oil or olive oil
4 garlic cloves, minced
1 small onion, sliced
1 cup coconut milk (full fat)
1 tbsp soy sauce
1 tsp fish sauce (optional)
1 tsp chili flakes (optional)
Salt & black pepper to taste

1 cup fresh basil leaves
1 tsp ginger, grated
1 tsp lime juice

Steamed rice, jasmine rice, or cauliflower rice
Cucumber slices or steamed veggies
👨🍳 Instructions
Heat oil in a large pan or wok over medium-high heat.
Add chicken, season lightly, and cook until golden. Remove and set aside.
In the same pan, sauté garlic, onion, and ginger until fragrant.
Pour in coconut milk, soy sauce, and fish sauce. Stir well.
Return chicken to the pan and simmer 5–7 minutes until sauce thickens.
Add basil and lime juice at the end for fresh flavor.
