Ingredients

For the Meatloaf:

1 ½ lbs ground beef (or a mix of beef and pork)

1 cup breadcrumbs (or crushed crackers)

½ cup milk

1 egg

1 small onion, finely diced

2 garlic cloves, minced

1 tbsp Worcestershire sauce

1 tbsp ketchup

1 tsp salt

½ tsp black pepper

½ tsp dried thyme

For the Caramelized Onion Gravy:

2 tbsp butter

1 large onion, thinly sliced

1 tbsp flour

1 ½ cups beef broth

½ tsp Worcestershire sauce

½ tsp salt

¼ tsp black pepper

Instructions

1. Prepare the Meatloaf

1. Preheat oven to 375°F (190°C).

2. In a bowl, combine breadcrumbs and milk; let sit for 5 minutes to absorb.

3. Add ground beef, egg, onion, garlic, Worcestershire sauce, ketchup, salt, pepper, and thyme to the bowl. Mix until just combined.

4. Shape the mixture into a loaf and place it on a lined baking sheet or loaf pan.

5. Bake for 45-50 minutes, or until cooked through (internal temp 160°F / 71°C).

2. Make the Caramelized Onion Gravy

1. While the meatloaf bakes, melt butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until deep golden brown (about 15-20 minutes).

2. Sprinkle flour over the onions and stir for 1 minute.

3. Slowly whisk in beef broth, Worcestershire sauce, salt, and pepper. Simmer until thickened (3-5 minutes).
