๐ฅ๐ฉ๐ช German Potato Salad

๐ Description
A warm, tangy potato salad made with tender potatoes, crispy bacon, and a vinegar-mustard dressing โ savory, slightly sour, and incredibly comforting (no mayo version!).
๐ Ingredients
1 kg potatoes (waxy type)
6 slices bacon (chopped)
1 small onion (finely chopped)
3 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp sugar
3 tbsp beef or chicken broth
2 tbsp olive oil or bacon fat
Salt & black pepper
Fresh parsley (optional)
๐จโ๐ณ Steps
1. Cook potatoes
Boil potatoes in salted water until tender โ drain โ slice while warm.
2. Cook bacon
Fry bacon until crispy โ remove and keep fat in pan.
3. Make dressing
In same pan, sautรฉ onion โ add vinegar, mustard, sugar, broth, and bacon fat โ simmer 1โ2 min.
4. Combine
Pour warm dressing over potatoes โ gently mix so they absorb flavor.
5. Finish
Add bacon bits + parsley โ serve warm.
