๐Ÿ“ Description

A warm, tangy potato salad made with tender potatoes, crispy bacon, and a vinegar-mustard dressing โ€” savory, slightly sour, and incredibly comforting (no mayo version!).

๐Ÿ›’ Ingredients
1 kg potatoes (waxy type)
6 slices bacon (chopped)
1 small onion (finely chopped)
3 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp sugar
3 tbsp beef or chicken broth
2 tbsp olive oil or bacon fat
Salt & black pepper
Fresh parsley (optional)
๐Ÿ‘จโ€๐Ÿณ Steps
1. Cook potatoes

Boil potatoes in salted water until tender โ†’ drain โ†’ slice while warm.

2. Cook bacon

Fry bacon until crispy โ†’ remove and keep fat in pan.

3. Make dressing

In same pan, sautรฉ onion โ†’ add vinegar, mustard, sugar, broth, and bacon fat โ†’ simmer 1โ€“2 min.

4. Combine

Pour warm dressing over potatoes โ†’ gently mix so they absorb flavor.

5. Finish

Add bacon bits + parsley โ†’ serve warm.
