Breakfast Bowl with Tots & Sausage Gravy

For the Tots:
☑️1 lb frozen tater tots
☑️Salt to taste
For the Sausage Gravy:
☑️1/2 lb breakfast sausage (crumbled)
☑️2 tbsp unsalted butter
☑️2 tbsp all-purpose flour
☑️2 cups whole milk
☑️1/2 tsp black pepper
☑️Salt to taste
For the Eggs:
☑️4 large eggs
☑️1 tbsp butter or oil
☑️Salt and pepper to taste
Optional Toppings:
☑️Shredded cheddar cheese
☑️Chopped green onions
☑️Hot sauce

1️⃣ . Bake the Tater Tots:
☑️. Preheat your oven to the temperature specified on the tater tot package.
☑️. Spread the tots on a baking sheet in a single layer and bake until golden and crispy, about 20–25 minutes. Season with salt.
2️⃣ . Make the Sausage Gravy:
☑️. In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through. Remove the sausage and set aside, leaving about 2 tbsp of fat in the skillet.
☑️. Add the butter to the skillet and melt it over medium heat. Stir in the flour and cook for 1–2 minutes to form a roux.
☑️. Gradually whisk in the milk, stirring constantly, until the gravy thickens.
☑️. Return the cooked sausage to the skillet, season with black pepper and salt, and simmer for 2–3 minutes.
3️⃣ . Cook the Eggs:
☑️. Heat butter or oil in a non-stick skillet over medium heat.
☑️. Crack the eggs into the skillet and cook sunny-side up or to your preferred doneness. Season with salt and pepper.
4️⃣ . Assemble the Breakfast Bowls:
☑️. Divide the tater tots among 4 bowls as the base.
☑️. Spoon a generous amount of sausage gravy over the tots.
☑️. Top each bowl with a fried egg.
5️⃣ . Garnish and Serve:
☑️. Sprinkle shredded cheddar cheese and chopped green onions over the top.
☑️. Add hot sauce if desired, and serve hot.
