2 tbsp olive oil
1 onion (chopped) 🧅
4 cloves garlic (minced) 🧄
3 carrots (chunked) 🥕
2 potatoes (optional in roast)
🍲 Braising Liquid:
2 cups beef broth
1 cup red wine (or extra broth) 🍷
2 tbsp tomato paste
1 tsp thyme
1 tsp rosemary
1 tbsp Worcestershire sauce
🥔 Mashed Potatoes:
4–5 potatoes (peeled & chopped)
3 tbsp butter 🧈
½ cup milk or cream 🥛

👨🍳 Instructions
1️⃣ Sear the beef
Season roast generously with salt & pepper
Sear in hot oil until browned on all sides
2️⃣ Build flavor base
Remove beef
Sauté onion, garlic, and tomato paste in same pot
3️⃣ Braise
Add broth, wine, herbs, Worcestershire sauce
Return beef to pot
Add carrots
Cover and cook on low heat or oven 160°C (320°F) for 2.5–3.5 hours
4️⃣ Make mashed potatoes
Boil potatoes until soft
Mash with butter, milk, salt, and pepper until creamy

Shred or slice beef
