🛒 Ingredients
🍗 Chicken & Marinade
1 kg chicken thighs or drumsticks
2 tbsp soy sauce
1 tbsp olive oil
2 tbsp brown sugar
3 cloves garlic
1 small onion
1–2 chili peppers (or Scotch bonnet substitute)
1 tsp thyme
1 tsp allspice
1 tsp paprika
½ tsp cinnamon
1 tsp black pepper
Juice of 1 lime
🍍 Pineapple Glaze
1 cup pineapple chunks (fresh or canned)
2 tbsp honey
1 tbsp soy sauce
1 tsp ginger (grated)
1 tbsp lime juice
👨🍳 Instructions
🍗 1. Make jerk marinade
Blend garlic, onion, chili, spices, soy sauce, lime juice, and brown sugar until smooth.
🥄 2. Marinate chicken
Coat chicken fully and refrigerate for at least 2 hours (overnight for best flavor).
🍍 3. Make pineapple glaze
Cook pineapple, honey, soy sauce, ginger, and lime juice until slightly thick and syrupy. Blend if desired.

Place chicken in a baking dish and bake at 200°C for 35–40 minutes until fully cooked and slightly charred.
