2 cups beef or lamb stock
2 sprigs rosemary 🌿

½ cup warm milk 🥛

1. 🔥 Sear the lamb

Season lamb with salt and pepper. Sear in hot oil until deeply browned on all sides. Remove and set aside.

2. 🧅 Build flavor base

In the same pot, sauté onion, carrots, and garlic until soft. Stir in tomato paste.

3. 🍷 Deglaze

Pour in red wine and scrape up all the flavor from the pan. Let it simmer for 2–3 minutes.

Add stock, herbs, and lamb shanks back in. Cover and cook:
