Delicious Savory Smoked Sausage & Potato Skillet

This hearty smoked sausage and potato skillet is packed with bold flavors and simple ingredients. Crispy potatoes, smoky sausage, and sautéed onions come together for a rustic, satisfying meal. Perfect for busy weeknights or a cozy weekend dinner!

**Ingredients:**
– 1 lb smoked sausage, sliced into ¼-inch rounds
– 4 medium potatoes, diced (russet or Yukon gold)
– 1 medium onion, sliced
– 1 red bell pepper, sliced (optional)
– 3 tbsp olive oil (divided)
– 1 tsp garlic powder
– 1 tsp smoked paprika
– ½ tsp dried thyme
– Salt & black pepper, to taste
– Fresh parsley, chopped (for garnish)

**Instructions:**
1. **Sauté the Potatoes:** Heat 2 tbsp olive oil in a large skillet over medium heat. Add diced potatoes, cook for 10-12 minutes until golden and tender. Season with salt, pepper, and half the garlic powder. Remove and set aside.
2. **Brown the Sausage:** In the same skillet, cook sliced smoked sausage for 5-6 minutes until browned. Remove and set aside.
3. **Sauté the Veggies:** Add 1 tbsp olive oil, then toss in onions and bell pepper. Cook for 4-5 minutes until softened.
4. **Combine & Finish:** Return potatoes and sausage to the skillet. Add smoked paprika, thyme, and remaining garlic powder. Stir well and cook for another 5 minutes to blend flavors.
5. **Garnish & Serve:** Sprinkle with fresh parsley and serve warm. Enjoy on its own or with a fresh green salad!
