500 g ground beef (80/20 fat ratio) π₯©
Salt & black pepper
4 burger buns π
4 cheese slices π§ (American or cheddar)
Butter (for toasting buns)
Burger sauce:
3 tbsp mayonnaise
1 tbsp ketchup
1 tsp mustard
1 tsp pickle juice π₯
Β½ tsp paprika
Optional toppings:
Pickles
Onions (raw or caramelized)

Preheat pan/griddle
Heat cast iron pan until very hot (smoking slightly).
Form beef balls
Roll beef into loose 100β120 g balls (donβt compact too tightly).
Smash immediately
Place beef ball on hot surface and smash hard with spatula. Season with salt and pepper.
Cook crust
Cook 2β3 minutes until deep brown crispy edges form.
Flip & cheese
Flip patties, add cheese, and cook 1β2 minutes.
Toast buns
Butter and toast buns until golden.
Assemble burger
Add sauce, patty, toppings, and top bun.
