Ingredients

Directions
Step 1: Prepare the Beef
In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides, about 4β5 minutes per batch. Transfer to the slow cooker.
Step 2: SautΓ© the Aromatics
In the same skillet, add the onion and garlic. Cook for 2β3 minutes until softened.
Add to the slow cooker along with the carrots, celery, and potatoes.
Step 3: Prepare the Broth
In a small bowl, whisk together beef broth, tomato paste, Worcestershire sauce, and thyme.
Pour the mixture over the beef and vegetables in the slow cooker. Add the bay leaf.
Step 4: Slow Cook the Stew
Cover the slow cooker and cook on:
Low: 8β10 hours
High: 4β6 hours
Stir in the frozen peas during the last 30 minutes of cooking, if using.
Step 5: Serve
Remove the bay leaf and discard.
Ladle the stew into bowls and garnish with fresh parsley.
