Seared Scallops and Grilled Steak with Mashed Potatoes

Ingredients:

6 large scallops, patted dry
8 oz steak (ribeye or filet mignon)
2 tbsp olive oil
2 tbsp butter (divided)
2 cloves garlic, minced
½ tsp salt
¼ tsp black pepper
½ tsp smoked paprika
2 cups mashed potatoes
¼ cup fresh parsley or chives, chopped
Instructions:

Season the steak with salt, black pepper, and smoked paprika.
Heat 1 tbsp olive oil in a pan over medium-high heat. Grill the steak to desired doneness, then let it rest before slicing.
In the same pan, add 1 tbsp butter and sear scallops for 1-2 minutes per side until golden brown. Add garlic and remaining butter, basting the scallops.
Serve mashed potatoes as the base on a blue plate. Place the steak and scallops on top.
Garnish with fresh parsley or chives and enjoy!
