Cheese & Veggie Omelette with Roasted Vegetables

Ingredients:
For the Omelette:

3 large eggs 🥚
¼ cup shredded cheese (cheddar or mozzarella) 🧀
2 tbsp milk
½ tsp salt
¼ tsp black pepper
1 tbsp butter
¼ cup diced onions
¼ cup bell peppers, chopped
¼ cup mushrooms, sliced
For the Roasted Vegetables:

1 cup baby potatoes, diced
½ cup cherry tomatoes, halved 🍅
¼ cup broccoli florets
¼ cup red bell pepper, chopped
1 tbsp olive oil
½ tsp garlic powder
½ tsp paprika
Salt & pepper to taste
Steps to Prepare:
Prepare the Vegetables: Toss diced potatoes, tomatoes, broccoli, and bell peppers in olive oil, garlic powder, paprika, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for 20-25 minutes.
Make the Omelette Mixture: Whisk eggs with milk, salt, and pepper.
Cook the Omelette: Melt butter in a non-stick pan, sauté onions, mushrooms, and bell peppers for 2 minutes. Pour in the egg mixture.
Add Cheese & Fold: Sprinkle shredded cheese on top. Once the omelette is set, fold it in half and cook for another minute.
Serve & Enjoy: Plate with roasted vegetables and garnish with fresh herbs.
