Ingredients:

For the Curry:

500g prawns (cleaned and deveined)

2 tbsp oil (coconut oil for a coastal flavor)

1 large onion (finely chopped)

2 medium tomatoes (pureed)

2-3 green chilies (slit)

1 tbsp ginger-garlic paste

1 tsp turmeric powder

2 tsp red chili powder

1 tsp coriander powder

1/2 tsp cumin powder

1 tsp garam masala

1 cup coconut milk (optional, for a creamy curry)

1 cup water (adjust for consistency)

Salt to taste

For Garnish:

Fresh coriander leaves (chopped)

Lemon wedges (optional)

Instructions:

Step 1: Prepare the Prawns

1. Rinse the prawns well and marinate them with a pinch of turmeric, red chili powder, and salt. Set aside for 10-15 minutes.

Step 2: Cook the Curry Base

1. Heat oil in a pan. Add the chopped onions and sauté until golden brown.

2. Add ginger-garlic paste and cook for 1-2 minutes until fragrant.

3. Stir in the tomato puree and green chilies. Cook until the oil separates from the masala.

Step 3: Add Spices

1. Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for 2-3 minutes.

Step 4: Simmer the Curry

1. Add coconut milk (if using) and water. Stir well and bring the curry to a gentle simmer.

Step 5: Cook the Prawns

1. Add the marinated prawns to the curry and cook for 5-7 minutes. Avoid overcooking as prawns can turn rubbery.

2. Sprinkle garam masala and mix gently.

Step 6: Garnish and Serve

1. Garnish with chopped coriander leaves.

2. Serve hot with steamed rice, jeera rice, or chapati.
