🧾 Ingredients
2 cucumbers (sliced thin)
1 1/2 cups fresh pineapple (cubed or sliced)
1–2 jalapeños (sliced) 🌶️
2 cloves garlic (smashed)
1 cup white vinegar
1/2 cup apple cider vinegar
1/2 cup water
2 tbsp sugar (or honey)
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp chili flakes (optional)
Fresh cilantro (optional)
👨🍳 Instructions
1. 🥒 Prep the veggies
Slice cucumbers, pineapple, and jalapeños and place them in a clean jar.
2. 🧄 Add flavor base
Add garlic, salt, pepper, and chili flakes into the jar.
3. 🥣 Make the brine
In a saucepan, combine white vinegar, apple cider vinegar, water, and sugar. Heat until sugar dissolves (don’t boil hard).
4. 🔥 Pour & pickle
Pour hot brine over the cucumbers and pineapple until fully covered.
5. ❄️ Cool & rest
Let cool to room temperature, then refrigerate for at least 4–6 hours (best overnight).
