One-Pot Creamy Tuscan Chicken Pasta

A warm, comforting pasta dish with tender chicken, creamy sauce, and Tuscan-inspired flavours—all made in one pot for an easy and satisfying meal.

Ingredients:

1 lb (450g) chicken breast, diced
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1/2 teaspoon chilli flakes (optional for spice)
Salt and black pepper, to taste
2 cups (500ml) chicken broth
1 1/2 cups (375ml) double cream
250g pasta shells (or other small pasta shapes)
1/2 cup (60g) sun-dried tomatoes, chopped
2 cups (60g) baby spinach
1 cup (100g) grated Parmesan cheese
Fresh basil or parsley, chopped (for garnish)
Instructions:

Cook the Chicken:
In a large pot or deep skillet, heat the olive oil over medium heat. Season the diced chicken with salt, pepper, and chilli flakes (if using). Cook the chicken until golden brown and fully cooked, about 5-6 minutes. Remove the chicken and set aside.

Sauté the Aromatics:
In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Add the Liquids and Pasta:
Pour in the chicken broth and double cream, then stir in the pasta shells and chopped sun-dried tomatoes. Bring the mixture to a gentle boil.

Cook the Pasta:
Reduce the heat to medium-low, cover, and let the pasta cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the liquid has thickened.

Add Chicken and Spinach:
Add the cooked chicken back into the pot along with the baby spinach. Stir until the spinach wilts and everything is well combined.

Finish with Parmesan and Serve:
Stir in the Parmesan cheese until melted and the sauce is creamy. Taste and adjust the seasonings as needed. Garnish with fresh basil or parsley before serving.
