800g beef chuck (cut into cubes)
3 tbsp oil
1 onion (sliced)
6 cloves garlic (crushed/minced) π§
2β3 bay leaves

Β½ cup soy sauce
Β½ cup cane vinegar (or white vinegar)
1 cup water or beef broth
1 tbsp brown sugar (optional balance)
1 tsp whole black pepper (or Β½ tsp ground)

Sear the beef
Heat oil in a pot
Brown beef cubes until slightly caramelized
Build aroma base
Add garlic + onion
Cook until fragrant and soft
Add liquids
Pour soy sauce, vinegar, and broth
Add bay leaves + pepper
Slow cook
Bring to boil, then simmer low heat
Cook 1β1.5 hours until beef is tender
Reduce sauce (important π₯)
Let sauce thicken until glossy and rich
Taste and adjust salt/sugar
