π§ Water for boiling

1 cup tomato juice (or Clamato)

2 tbsp ketchup
π Juice of 2 limes

1/2 red onion, finely chopped

1 tomato, diced
π₯ 1 avocado, diced
πΏ 2 tbsp cilantro, chopped
πΆοΈ 1 jalapeΓ±o, finely chopped (optional)
π§ Salt & pepper to taste
π Saltine crackers or tostadas for serving

π¦ Boil shrimp in salted water for 2β3 minutes until pink.
βοΈ Drain and immediately cool shrimp in ice water, then chop into bite-size pieces.

In a large bowl, mix tomato juice, ketchup, lime juice, and hot sauce.

Add chopped onion, tomato, jalapeΓ±o, and cilantro.

π₯ Gently fold in diced avocado.
