This Mexican Shrimp Cocktail (Coctel de Camarones) is a fresh, spicy, and tangy seafood dish made with juicy shrimp in a chilled tomato-lime sauce. Itโs light, refreshing, and packed with bold Mexican flavors.
๐ Ingredients
๐ฆ 500g shrimp, peeled & deveined
๐ง Water for boiling
๐ง 1 tsp salt

1 cup tomato juice (or Clamato)

2 tbsp ketchup
๐ Juice of 2 limes
๐ถ๏ธ 1โ2 tbsp hot sauce (to taste)

1/2 red onion, finely chopped

1 tomato, diced
๐ฅ 1 avocado, diced
๐ฟ 2 tbsp cilantro, chopped
๐ถ๏ธ 1 jalapeรฑo, finely chopped (optional)
๐ง Salt & pepper to taste
๐ Saltine crackers or tostadas for serving
๐จโ๐ณ Instructions
๐ฆ Boil shrimp in salted water for 2โ3 minutes until pink.
โ๏ธ Drain and immediately cool shrimp in ice water, then chop into bite-size pieces.

In a large bowl, mix tomato juice, ketchup, lime juice, and hot sauce.

Add chopped onion, tomato, jalapeรฑo, and cilantro.
๐ฆ Stir in the cooked shrimp.
๐ฅ Gently fold in diced avocado.
๐ง Season with salt and pepper to taste.
