Golden-Fried Bologna Sandwiches with Melted Cheese

Ingredients:

4 slices of thick-cut bologna
2 tablespoons unsalted butter
4 slices of bread (white, whole wheat, or your choice)
4 slices of American cheese (or your favorite cheese)
1 tablespoon mayonnaise
1 tablespoon mustard (optional)
Salt and pepper to taste
Directions:

Fry the Bologna:

Heat a large skillet over medium heat and add 1 tablespoon of butter.
Place the bologna slices in the skillet and cook for 2-3 minutes per side, until crispy and browned. Remove from the skillet and set aside.
Toast the Bread:

In the same skillet, add the remaining butter and toast the bread slices for 2-3 minutes, flipping once, until golden and crispy.
Assemble the Sandwiches:

Spread a thin layer of mayonnaise and mustard (if using) on one side of each slice of toasted bread.
Place a slice of cheese on the bottom slice of bread. Add a fried bologna slice on top, followed by another slice of cheese.
Top with the second slice of bread, mayo side down.
Melt the Cheese:

Return the assembled sandwiches to the skillet and cook for 1-2 minutes on each side, pressing gently with a spatula, until the cheese is melted and the bread is golden brown.
Serve:

Remove from heat, slice in half, and serve warm.
