Garlic Parmesan Beef Chops with Cheesy Scalloped Potatoes

Ingredients:

For the Garlic Parmesan Beef Chops:

4 beef chops (such as rib-eye or sirloin)
4 cloves garlic, minced 🧄
¼ cup grated Parmesan cheese 🧀
2 tbsp olive oil 🫒
1 tsp dried thyme 🌿
Salt & pepper to taste
For the Cheesy Scalloped Potatoes:

4 cups thinly sliced potatoes 🥔
1 cup shredded cheddar cheese 🧀
1 cup heavy cream 🥛
Salt & pepper to taste
Instructions:

Prepare the Beef Chops:

Preheat the oven to 375°F (190°C).
Season the beef chops with salt, pepper, minced garlic, and dried thyme. Rub the grated Parmesan cheese onto both sides of the chops.
Heat olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, sear the beef chops for 3-4 minutes per side until a golden brown crust forms.
Transfer the skillet to the oven and roast the chops for 10-12 minutes, or until the desired doneness is reached. Remove from the oven and let rest for 5 minutes.
Make the Cheesy Scalloped Potatoes:

While the beef chops are cooking, preheat the oven to 375°F (190°C) if not already done.
In a greased baking dish, layer the thinly sliced potatoes evenly.
In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Season with salt and pepper.
Pour the cream over the layered potatoes. Sprinkle the shredded cheddar cheese evenly on top.
Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, until the potatoes are tender and the cheese is golden and bubbly.
Serve:

Plate the beef chops and serve with the cheesy scalloped potatoes on the side. Garnish with extra Parmesan if desired, and enjoy this comforting and indulgent meal!
