Garlic Butter Steak and Potatoes

Ingredients:
1 lb steak (sirloin or ribeye), cut into 1-inch cubes
1 lb baby potatoes, halved
3 tbsp olive oil, divided
Salt and pepper, to taste
4 tbsp butter
4 cloves garlic, minced
1 tsp fresh thyme leaves
1 tsp fresh rosemary, chopped
Fresh parsley, chopped (for garnish)
Instructions:
Cook Potatoes: In a large skillet over medium heat, add 1 Β½ tbsp olive oil. Add halved baby potatoes, season with salt and pepper, and cook for 15-20 minutes until golden and tender. Transfer to a plate and set aside.
Cook Steak: In the same skillet, add remaining olive oil and heat over high. Add steak cubes in a single layer, season with salt and pepper, and sear for 2-3 minutes per side to your preferred doneness. Remove and set aside.
Make Garlic Butter: Reduce heat to medium, add butter to the skillet, and let it melt. Add minced garlic, thyme, and rosemary, cooking until fragrant, about 1 minute.
Combine & Serve: Return the potatoes and steak to the skillet, tossing to coat in the garlic butter. Garnish with chopped parsley and serve immediately.
Notes:
For extra flavor, add a splash of Worcestershire sauce to the garlic butter.
Serve with a fresh green salad or crusty bread for a complete meal.
