Crispy Fried Fish

Ingredients
Fish:
4-6 white fish fillets (cod, haddock, or tilapia)
Batter:
1 cup flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
1 egg
1 cup cold water (or club soda for extra crispiness)
For Frying:
Vegetable oil (for frying)
Directions
In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
In a separate bowl, beat the egg, then whisk in cold water or club soda. Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms.
In a deep frying pan or pot, heat vegetable oil to 350°F.
Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it’s fully coated. Carefully lower the fish into the hot oil and fry for 4–5 minutes per side or until golden brown and crispy. Remove from the oil and drain on a wire rack or paper towels.
Serve hot with tartar sauce, lemon wedges, or your favorite dipping sauce.
