Ingredients:
• 1 lb white fish fillets (cod, haddock, or tilapia)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon garlic powder
• 1 teaspoon paprika
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup cold sparkling water
• Vegetable oil for frying
Directions:
1️⃣ Pat the fish fillets dry and cut them into finger-sized strips.
2️⃣ In a large bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper.
3️⃣ Gradually add the cold sparkling water to the dry ingredients, stirring until you have a smooth batter.
4️⃣ Heat the vegetable oil in a deep frying pan or pot over medium-high heat. Ensure the oil is hot enough by testing with a small drop of batter—it should sizzle immediately.
5️⃣ Dip each fish strip into the batter, allowing excess to drip off, then carefully lower it into the hot oil.
6️⃣ Fry the fish fingers in batches for 3-4 minutes, turning occasionally, until they are golden and crispy.
7️⃣ Remove the fish fingers with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
8️⃣ Serve hot with tartar sauce, ketchup, or a squeeze of lemon.
