For the Chicken
2 lbs chicken (thighs or whole chicken pieces)
1 onion, chopped
2 carrots, sliced
2 celery stalks, chopped
2 garlic cloves, minced
6 cups chicken broth
1 tsp salt
1 tsp black pepper
1 tsp thyme
2 tbsp butter
For Slick Dumplings
2 cups all-purpose flour
1 tsp salt
2 tbsp butter (cold)
¾ cup milk or buttermilk
Extra flour for rolling

1. Cook the Chicken Base
In a large pot, melt butter and sauté onion, carrots, celery, and garlic.
