Cheesy Pesto Chicken Roll-Ups

Ingredients:
– 4 boneless, skinless chicken breasts
– 1/4 cup basil pesto
– 1 cup mozzarella cheese, shredded
– 1 cup cherry tomatoes, halved
– 1 teaspoon garlic powder
– 1 teaspoon Italian seasoning
– Salt and black pepper to taste
– 1 tablespoon olive oil
– Fresh parsley or basil for garnish
Directions:
1. Preheat Oven:
– Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
2. Prepare the Chicken:
– Slice each chicken breast horizontally to create thin fillets, or pound them to an even thickness. Season both sides with garlic powder, Italian seasoning, salt, and pepper.
3. Assemble the Roll-Ups:
– Spread a thin layer of pesto over one side of each chicken fillet. Sprinkle mozzarella cheese evenly and top with cherry tomato halves.
– Roll each chicken fillet tightly and secure with toothpicks if needed.
4. Sear the Chicken:
– Heat olive oil in a skillet over medium heat. Sear the chicken roll-ups for 2-3 minutes on each side until golden brown.
5. Bake:
– Transfer the roll-ups to the prepared baking dish. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.
6. Serve:
– Remove toothpicks, garnish with fresh parsley or basil, and serve warm. Pair with a fresh salad or steamed veggies for a complete meal.
