These Roasted Red Pepper and Goat Cheese Alfredo Roll-Ups are a delicious and creamy dish that combines the flavors of roasted red peppers with tangy goat cheese, all wrapped in tender lasagna sheets and smothered in rich Alfredo sauce. Perfect for a comforting dinner or a special occasion!
Ingredients
8 lasagna sheets, cooked and drained
1 cup roasted red peppers, chopped
1 cup goat cheese, crumbled
2 cups Alfredo sauce
1 clove garlic, minced
Fresh herbs (thyme, parsley) for garnish
Salt and pepper, to taste
Instructions
1. Prepare the Filling:
In a bowl, combine the chopped roasted red peppers, crumbled goat cheese, and minced garlic. Season with salt and pepper to taste.
2. Assemble the Roll-Ups:
Preheat your oven to 350°F (175°C).
Spread a thin layer of Alfredo sauce on the bottom of a baking dish (about 1 cup).
Lay a lasagna sheet flat on a clean surface. Place a generous spoonful of the roasted red pepper and goat cheese mixture on one end of the sheet and roll it up tightly. Repeat with the remaining sheets.
3. Arrange in Baking Dish:
Place the roll-ups seam-side down in the prepared baking dish. Pour the remaining Alfredo sauce over the top, ensuring all the roll-ups are covered.
4. Bake:
Cover the dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden.
5. Serve:
Once done, remove from the oven and let it sit for a few minutes. Garnish with fresh herbs before serving
