BATTERED COD SANDWICH WITH ONION RINGS

A classic pub-style favorite featuring crispy battered cod fillets served on a soft sandwich bun with tangy tartar sauce, fresh toppings, and a side of golden, crispy onion rings.

INGREDIENTS
For the Cod Sandwich:

4 cod fillets (4–6 oz each)
1 cup all-purpose flour
1 cup cold sparkling water
1 teaspoon baking powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
Vegetable oil, for frying
4 sandwich buns (brioche or Kaiser rolls recommended)
Lettuce leaves, tomato slices, and red onion rings (optional toppings)
1/2 cup tartar sauce (store-bought or homemade)
For the Onion Rings:

2 large onions, sliced into thick rings
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper, to taste
Oil for frying
INSTRUCTIONS
1. Prepare the Onion Rings:

Soak onion rings in buttermilk for 15–20 minutes.
In a bowl, mix flour, cornstarch, garlic powder, smoked paprika, salt, and pepper.
Heat oil in a deep skillet or fryer to 350°F (175°C).
Coat onion rings in the flour mixture and fry in batches until golden and crispy, about 2–3 minutes per side. Drain on paper towels.
2. Make the Batter for Cod:

In a bowl, whisk together flour, baking powder, garlic powder, paprika, salt, and pepper. Gradually add sparkling water, whisking until smooth.
Heat oil in a skillet or deep fryer to 375°F (190°C).
Pat cod fillets dry and season lightly with salt and pepper.
3. Fry the Cod:

Dip the fillets into the batter, ensuring they are fully coated.
Carefully lower them into the hot oil and fry until golden brown and cooked through, about 4–5 minutes.
Drain on a wire rack or paper towels.
4. Assemble the Sandwich:

Lightly toast the sandwich buns.
Spread tartar sauce on the bottom bun.
Add lettuce, a fried cod fillet, and optional toppings like tomato slices and red onions.
Top with the other half of the bun.
5. Serve:
Plate the sandwiches alongside the crispy onion rings. Add a wedge of lemon and extra tartar sauce for dipping.
