📝 Ingredients
2 cups paella rice or short-grain rice
1 lb shrimp, peeled & deveined
1 lb mussels or clams, cleaned
½ lb calamari rings
1 small onion, diced
1 red bell pepper, sliced
4 garlic cloves, minced
1 tomato, grated or finely chopped
4 cups seafood broth
1 tsp smoked paprika
Pinch of saffron threads
¼ cup peas
3 tbsp olive oil
Salt & black pepper to taste
Lemon wedges & parsley for garnish
👨‍🍳 Instructions
Heat olive oil in a large paella pan or skillet.
Sauté onion, bell pepper, and garlic until softened.
Stir in tomato, smoked paprika, and saffron.
Add rice and toast lightly for 1–2 minutes.
Pour in seafood broth and spread rice evenly.
Simmer without stirring for 10 minutes.
Add shrimp, mussels, calamari, and peas on top.
Continue cooking until seafood is done and rice is tender with crispy bottom bits (socarrat).
Rest for 5 minutes before serving.
Garnish with parsley and lemon wedges.
