This Garlic Herb Spatchcocked Turkey is juicy on the inside, crispy on the outside, and packed with rich garlic herb butter flavor. Spatchcocking the turkey helps it cook faster and more evenly, making it perfect for Thanksgiving, holidays, or any special feast.

📝 Ingredients
1 whole turkey (10–14 lbs), backbone removed (spatchcocked)
½ cup butter, softened
4 tbsp olive oil
6 garlic cloves, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp fresh sage, chopped
1 tbsp paprika
1 tbsp salt
1 tsp black pepper
1 lemon, halved
Optional: onions, carrots, celery (for roasting base)
👨‍🍳 Instructions
Preheat oven to 425°F (220°C).
Pat turkey dry and place it flat on a tray (spatchcocked).
Mix butter, olive oil, garlic, herbs, paprika, salt, and pepper.
Rub herb butter generously under and over the skin.
Place turkey on a roasting rack over vegetables if using.
Roast for 70–100 minutes until internal temp reaches 165°F (74°C).
Rest for 15–20 minutes before carving.
Serve with pan juices or gravy.
