500 g ground beef (80/20 fat ratio) ๐Ÿฅฉ
Salt & black pepper
4 burger buns ๐Ÿž
4 cheese slices ๐Ÿง€ (American or cheddar)
Butter (for toasting buns)

Burger sauce:

3 tbsp mayonnaise
1 tbsp ketchup
1 tsp mustard
1 tsp pickle juice ๐Ÿฅ’
ยฝ tsp paprika

Optional toppings:

Pickles
Onions (raw or caramelized)

Preheat pan/griddle
Heat cast iron pan until very hot (smoking slightly).
Form beef balls
Roll beef into loose 100โ€“120 g balls (donโ€™t compact too tightly).
Smash immediately
Place beef ball on hot surface and smash hard with spatula. Season with salt and pepper.
Cook crust
Cook 2โ€“3 minutes until deep brown crispy edges form.
Flip & cheese
Flip patties, add cheese, and cook 1โ€“2 minutes.
Toast buns
Butter and toast buns until golden.
Assemble burger
Add sauce, patty, toppings, and top bun.
