800g beef chuck (cut into cubes)
3 tbsp oil
1 onion (sliced)

1 cup water or beef broth

Sear the beef
Heat oil in a pot
Brown beef cubes until slightly caramelized
Build aroma base
Add garlic + onion
Cook until fragrant and soft
Add liquids
Pour soy sauce, vinegar, and broth
Add bay leaves + pepper
Slow cook
Bring to boil, then simmer low heat
Cook 1โ€“1.5 hours until beef is tender
Reduce sauce (important ๐Ÿ”ฅ)
Let sauce thicken until glossy and rich
