Thai Peanut Glazed Steak Skewers

Ingredients:

For the Peanut Sauce:
– 1/2 cup creamy peanut butter
– 1/3 cup tamari or soy sauce
– 2-3 tablespoons Thai red curry paste
– 1 tablespoon chopped pickled ginger
– 1 tablespoon toasted sesame oil

For the Steak:
– 1/3 cup sweet Thai chili sauce
– 1/3 cup tamari or soy sauce
– 6 cloves garlic, chopped
– 1 tablespoon fresh grated ginger
– 2 tablespoons chili paste (Thai curry or Gochujang)
– 2 pounds flank steak, cubed

For Serving:
– Rice or coconut rice
– Limes, avocado, sesame seeds, and cilantro

Directions:

1. Make the Peanut Sauce: In a glass jar or blender, combine the peanut butter, tamari, red curry paste, pickled ginger, and sesame oil. Blend until smooth, adding water as needed to reach your desired consistency.
2. Marinate the Steak: In a bowl, mix together the sweet Thai chili sauce, tamari, garlic, ginger, and chili paste. Add the cubed steak and toss to coat evenly. Let it marinate for at least 10 minutes.
3. Prepare Skewers: Thread the marinated steak onto skewers.
4. Grill the Skewers: Preheat your grill, grill pan, or skillet to medium-high heat. Grill the skewers until they are lightly charred, turning them occasionally, for about 8 to 12 minutes.
5. Serve: Arrange the grilled skewers over a bed of rice. Garnish with lime wedges, sliced avocado, sesame seeds, and fresh cilantro. Serve with the peanut sauce on the side.
