Stuffed Roasted Red Bell Peppers w/Crab & Shrimp

Ingredients:
4 large red bell peppers, tops cut off and seeds removed
1/2 lb lump crab meat
1/2 lb shrimp, peeled and chopped
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp lemon juice
1 tsp Old Bay seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Roast the Peppers: Preheat your oven to 375°F (190°C). Place the bell peppers on a baking sheet and roast for 20 minutes until softened. Set aside.
Prepare the Filling: In a skillet, heat the olive oil over medium heat. Sauté the garlic for 1-2 minutes until fragrant.
Add the crab, shrimp, breadcrumbs, Parmesan cheese, lemon juice, Old Bay seasoning, salt and pepper. Cook for 4 minutes until heated through and well combined.
Stuff the Peppers: Spoon the crab and shrimp mixture into each roasted bell pepper.
Bake: Return the stuffed peppers to the oven and bake for an additional 10 minutes.
Serve: Garnish with fresh parsley and serve warm.
